6 slices of bacon cut in small strips, 1 medium sized yellow onion pealed and finely chopped, 6 medium potatoes pealed and cubed (1/2 in.), 1/3 cup chopped parsley, about 1 tsp. salt, 2 cans of clams, 2 cups 1/2 & 1/2 cream, fresh ground pepper.

Brown bacon in large sauce pan, remove bacon to small bowl, leave bacon grease in pan and add onion, saute but do not brown, add potatoes, parsley, salt, pepper, juice from clams, cook until potatoes are tender (10 to 12 mins.) add cream, bacon, clams (1/2 of potatoes and cream can be pureed and recombined with other ingredients to produce a thicker soup) Check flavor balance, reheat and serve topped with grated Parmesan cheese.
