5 - 7 onions
3Tbs oil
2 long wrapped pkgs of Ritz crackers
1 cube butter
1 c milk
2 eggs, beaten
1 c grated cheese

Directions:
Directions:
Peel and slice onions in rings. Separated and saute in oil stirring until all sides are tender. Crush crackers. Melt butter and mix with cracker crumbs. Reserve 1 cup of crumbs. Press remaining crumb mixture in bottom of a 9x11 inch pan. Spread cooked onion over top of crumb layer. Salt and pepper to taste. Heat milk, eggs, and grated cheese on stove. Mix together well and pour over onions. Sprinkle reserved cup of crumb mixture over the top. Bake at 350 for 25 minutes.

This is a recipe of a friend who likes to serve it as a side dish with her Thanksgiving Dinner. Also can be served as a side dish with pork roast or chicken. As much as mom liked onions, I think she would have liked this recipe.
