1/3 Cup Plain Flour
1 Lb Smoked Sausage, cut into ¼” slices
Vegetable Spay
2 Onions, Chopped
2 Celery Ribs, Chopped
1 Small Green Pepper, Chopped
4 Clove Garlic, Minced
½ t Dried Thyme
½ t Ground Red Pepper
8 Cooked Chicken Breast, chopped
2 32 oz containers Chicken Broth
1 14.5 oz Diced Tomatoes (can also add can Rotel)
½ Lb fresh Shrimp
1 10 oz pkg frozen okra
Hot Cooked Rice

Directions:
Directions:
1. Cook flour in a Dutch oven over medium heat. Stirring constantly. IT WILL BURN. (About 10 minutes until the color looks like peanut butter)
2. Sauté sausage. Add onion, celery, pepper, garlic and spices. Sauté 5 minutes.
3. Add chicken. Add brown flour. Add Broth and tomatoes. Simmer 30 minutes.
4. Add Shrimp, Okra. Simmer 15 minutes. Serve over hot rice. Makes 3 ½ quarts.
