8 med Potatoes, boiled and sliced
4 Tbls Butter
4 Tbls Flour
tsp Salt
tsp Pepper
2 cup Milk
tsp Dry Mustard
1 cup Nippy American Cheese

Directions:
Directions:
To make the cheese sauce, melt the butter and stir in the flour. Cook over low heat stirring constantly till bubbly. Remove from heat and stir in the salt, pepper, milk, dry mustard, and nippy cheese. Bring to boil, stirring constantly. Boil 1 minute.

Pour the cheese mixture over the cooked sliced potatoes in an oven safe dish.

Sprinkle grated cheese on the top and bake at 350 degrees for 25-30 minutes.

You may make this ahead and refrigerate it prior to baking. If so, increase the baking time to 40-60 minutes.
