2 cups (1pt) strawberries
1/2 c sugar
1 envelope unflavored gelatin
1/8 t salt
1/4 c cold water
2 eggs, separated
Red food coloring
1 c cream for whipping

Directions:
Directions:
Soften gelatin with salt in water in top of double boiler. Heat slowly over direct heat just until gelatin dissolves; remove from heat.
Beat egg yolks slightly in a cup; stir into sugared strawberries, then stir into gelatin mixture. Cook stirring constantly over simmering water 5 minutes, or until mixture thickens slightly and coats a metal spoon. Tint. Pour into large bowl, set bowl in ice water to speed setting. Chill until thick as unbeaten egg white. Beat egg whites until foamy white and double in volume in small bowl. Sprinkle in 1/4 c sugar. Beat cream in second small bowl. Fold in egg whites and then whipped cream into thickened gelatin mixture until no streaks of white remains.
