2 small cans of pink salmon
1 egg beaten
1/2 cup cracker crumbs
onion (optional )
pepper -- to taste
sage -- to taste

Directions:
Directions:
Drain some of the juice off the salmon, add the rest of the ingredients. Mix well and shape into balls. Roll in flour, flatten into patties, and fry in hot oil until golden brown on each side. Tarter sauce is good on these.
