1 pound ground pork sausage, out of casing
1 package of thick sliced bacon (get lean),
1 lb. of sliced button mushrooms (optional)
1 chopped medium bell pepper (optional)
1 chopped medium sweet onion (optional)
1 teaspoon mustard powder
1/2 teaspoon salt
4 eggs, beaten
2 cups milk
6 slices white bread, toasted and cut into cubes
8 ounces mild Cheddar or Swiss cheese, shredded

Directions:
Directions:
Preheat oven to 375 degrees. Place all bacon on a rack and place rack on a cookie sheet. Bake in the oven until fat is drained off and bacon is crispy. While the bacon is cooking, crumble sausage (and add vegetables if preferred) into a medium skillet. Cook over medium heat until evenly brown; drain. In a medium bowl, mix together mustard powder, salt, eggs and milk. Add the cooked meats (veggies if you chose to use them), chopped bread cubes, and cheese, and stir to coat evenly. Pour into a greased 9x13 inch baking dish. Cover, and chill in the refrigerator for 8 hours, or overnight. To bake, preheat oven to 350 degrees. Cover, and bake 50 minutes. Uncover, and reduce temperature to 325 degrees. Bake for an additional 30 minutes, or until set in the center. Toothpick test will work like you do with cake. Serves 8

Very hearty and good in the winter or for when you company. Set it and forget it and bake in the morning. Serve with a side of fresh fruit and coffee and you are all set! Can also be served as a brunch item or pot luck item and is good room temperature as well. Sometimes I will add other ingredients to vary it up, artichoke hearts, onions, spinach and Swiss or make a like a Mexican style with peppers and onions and a little touch of hot sauce and cheddar cheese and serve with salsa on the side. Ground turkey sausage and egg beaters can be substituted with low fat cheeses for a less caloric recipe, however, you can cut cooking time back a bit once you uncover to 15 to 20 minutes.
