32 oz. bag frozen hash brown potatoes
1 lb. cubed ham
1 small onion, diced or green onions
1 1/2 c. shredded cheddar cheese
12 eggs
1 c. milk
1 tsp. salt
1 tsp. pepper
1 tsp. ground mustard

Directions:
Directions:
Layer 1/3 potatoes, ham, onion, and cheese in crockpot. Repeat two times. Beat together eggs,milk, salt, pepper, and mustard. Pour over potatoes. Cook on low 8-9 hours.

Be creative with this one. You could add sausage, peppers, mushrooms, etc. to change it up a bit.
