Ingredients2 tbsp butter or margarine
2 tb All-purpose flour
Salt & pepper; to taste
1 1/4 c Milk
3/4 c Velveeta cheese; shredded or
3 md Potatoes; peeled and sliced
1/2 c Cheddar cheese; shredded

Directions:
Directions:
For sauce, melt butter, stir in flour, salt and pepper. Add milk all at once. Cook and stir till thickened and bubbly. Stir in Velveeta cheese until melted. Remove from heat. Place half the sliced potatoes in a greased 1 quart casserole. Cover with half the sauce.

Repeat layers. Sprinkle with cheddar cheese. Bake, covered, in a 350F degree oven for 35 minutes. Uncover; bake 30 minutes more or till potatoes are tender. Let stand 5 minutes. Serves 4

I cut this down for my own small family but for an entire family at Easter we make this times 5. It's not for the faint hearted and the only time I put Velveeta in my body is when I eat ham. Sometimes you just have to say what the hell!
