1/3 c. diced celery
1/3 c. diced carrots
1/4 c. diced onion or 1 bunch green onions
2 T. butter
2 T. flour
1 qt. milk
2 chicken bouillon cubes
2 T. parsley
salt/pepper
seasoned salt
1/4 tsp. cayenne pepper or red pepper
6 med. potatoes, peeled and cooked,diced

Garnish:
green onions
shredded cheddar cheese
bacon bits

Directions:
Directions:
In Dutch oven, saute celery, onion, and carrots in butter; until tender. Stir in flour until smooth. Gradually add milk, cook and stir until thickened and bubbly. Add bouillon, parsley, salt/pepper, cayenne,and seasoned salt. Simmer for 20 minutes, stirring occasionally. Add 1/2 the potatoes to the soup. Mash the other 1/2 and add them to the soup. Simmer until heated through. Serve with garnishes.
