3 eggs, 1/2 C oil
1/2 C applesauce
2 C sugar
3 C grated zucchini
3 C flour
2 tsp baking soda
1 tsp salt
2 tsp cinnamon
2 tsp vanilla
1/2 C nuts, optional
1/4 tsp baking powder
1/4 tsp allspice

Directions:
Directions:
Blend oil, applesauce, and sugar. Add eggs and vanilla. Sift dry ingredients and add to liquid, Add nuts. Bake in 2 greased loaf pans for 1 hour at 350.
