1 long loaf French or Italian bread
4 - 8 oz. cream cheese, softened
1/2 - 1 cup finely chopped pecans
apricot or raspberry jam
6 large eggs
1/4 c. water
1/4 c. milk
1 tsp. almond or vanilla extract
1 tsp. cinnamon
3 T. butter
1 T. oil

Cut bread diagonally into 16 slices. Spread cream cheese on one side of 8 slices. Cover cream cheese with some jam (instead you might try mixing crushed pineapple into cream cheese) and sprinkle nuts over the top. Top each spread piece with a plain piece to make 8 sandwiches. Beat eggs with milk, water, cinnamon (as desired) and extract in a bowl. Dip each sandwich in egg to coat. Fry in butter and oil in large skillet on both sides until crisp and golden.
Serve with maple syrup. Optional glaze: boil 1 small jar apricot preserves and 1/2 cup orange juice
until thick.
