1 spaghetti squash (about 4 lbs.)
1/4 c. olive oil
1/2 tsp. minced garlic
1 tsp. oregano
1/2 tsp. salt
Freshly grated parmesan

With a sharp knife, deeply pierce squash 6 to 8 times to make steam vents. Place on paper towel in microwave oven. Cook on HIGH, turning 3 to 4 times to cook evenly, for 25 to 30 minutes (5 to 6 minutes per pound). Let stand for 5 minutes. Meanwhile mix oil, garlic and oregano in large microwave-safe bowl. Microwave for 2 minutes on HIGH. Cut squash in half lengthwise. Scoop out and discard seeds. With a fork, pull out long spaghetti-like strands and place in bowl with oil mixture; gently toss to coat and mix. Season with salt and pepper. Serve squash from its shell or a serving dish. Pass parmesan cheese at the table.
