6 C Clamato Juice
2 medium cucumbers, peeled, seeded and diced
1/4 C minced fresh or 2 T dried basil leaves
2 T red wine vinegar
2 tsp pepper
1/2 lb. cooked tiny shrimp
1 large firm ripe avocado, chopped
1 T lemon juice
3 oz. cream cheese, cubed
salt to taste

Directions:
Directions:
Combine 1/2 the Clamato and 1/2 the Cucumbers in a blender and blend until smooth. Add remaining Clamato, cucumbers, basil, vinegar and pepper. Chill. Rinse shrimp and add along with avocado and cream cheese. Season to taste with salt.

I usually double. I don't really like gazpacho, but this one's a winner!
