Ingredients: 1/4 lb. butter 2/3 C sugar 1 can (8oz.) almond paste 4 large eggs 3 T blour 1/4 tsp salt 1/4 tsp baking powder 2 T almond extract Sauce: 1/2 C seedless raspberry jam 1/4 C sugar 1/2 C water 1 tsp almond extract 2/3 C fresh raspberries

Directions:Grease 9" cake pan and line bottom with circle of waxed paper, greased. Cream sugar and butter 'til fluffy. Add crumbled almond paste and beat at low speed 2-3 minutes. Separate eggs and add yolks one at a time to batter. Add almond extract. Beat in flour, salt and baking powder. Whip egg whites until stiff and fold into batter. Pour into pan and bake at 300º for 45-60 minutes until top springs back from a light touch. Carefully turn out and remove waxed paper while still warm. Top with raspberry sauce and slice thin to serve. Sauce: Combine jam, sugar and water in small sauce pan and boil for 3 minutes. Remove from heat and add almond extract. Cool and fold in fresh berries. |
