1 large jar Las Palmas Green Chili Enchilada Sauce
1 can cream of mushroom soup
4-5 chicken breast halves, cooked and shredded
8-10 corn tortillas
Grated cheese (longhorn, jack, cheddar as you wish)
Diced onions

Directions:
Directions:
Mix the enchilada sauce, cream of mushroom soup, and chicken breast.

Fry the corn tortillas in oil, then drain.

Layer in a greased 9 x 13” pan:
2-3 tortillas
Sauce
Grated cheese
Diced onions

Repeat the layers about three times, ending with sauce, cheese, and onions. Bake at 350 degrees for 30 minutes, or until sauce is bubbling. Serve with refried beans.

Watch out, Max and Susan—this dish actually comes from New Mexico. The recipe, from Chris’s mom Jeannette, is the only dish John likes better than ratatouille.
