Ingredients:  
1 - 2 cloves garlic, minced
1 large onion, chopped
1 green pepper, chopped
2 c. corn (fresh, canned or frozen)
1 small - medium sized zucchini, chopped
1 1/2 T. ground cumin
2 c. cooked black beans
1 c. chicken or vegetable broth
6 T. salsa
Four or corn tortillas
Cheddar, feta or queso blanco cheese
Chopped cilantro, green onions or chives, to taste

Directions:
Saute garlic in 2 tsp. oil for 1 minute. Add onion and green pepper and saute until crisp tender. Add corn, zucchini and cumin and continue to saute until all vegetables are tender, but not browned. Add black beans, broth and salsa and cook until there is no excess moisture. Remove from heat and add cilantro, sliced green onions or chives to taste. Preheat frying pan with a little bit of oil and place tortilla in pan. Add cheese to center of tortilla and add 1/4 - 1/2 c. filling. Place second tortilla on top, flip and fry until cheese is melted.

Spinach, roasted poblano peppers or other veggies can be substituted for the corn or zucchini. May also add chopped chicken.
