1/2 cup olive oil
1 1/2 lb. beef, turkey or chili meat (good quality)
1 white onion - finely chopped
1 tbsp.. fresh minced garlic
12 oz bottle DARK beer
14 1/2 oz. can petite cut tomatoes
1 jalapeņo pepper finely chopped (omit seeds)
1/3 cup chili powder
1 1/2 tsp.. ground cumin
3/4 cup chicken stock (broth)
1 can black beans - rinsed & drained
1 fresh lime
1/2 cup honey
salt & pepper to taste

Cook in a large Dutch oven. Add oil to hot pan; add meat and saute on medium-high until cooked. Add onions & garlic & cook for 3 minutes. Add beer & reduce to medium heat; add tomatoes, peppers, chili powder & cumin. Stir & cook 10 more minutes. Reduce to medium-low heat & add the stock; simmer 45 minutes, stirring occasionally. Add beans & simmer 15 minutes. Add the juice of the lime, honey, salt & pepper. Heat & serve with cornbread.
