3/4 # cooked shrimp or cans to make 1/2 #
8 oz cream Cheese
1/# Shredded cheddar cheese
Juice of 1 Lime
2 pieces of chipolte peppers( found in the Mexican section)
Pecans chopped fine to cover cheese balls(about 1 1/2 cups
This makes a firm but creamy mixture. I you want a more firm mixture increase cheddar cheese to 1 # and shrimp to 1#. Add 3-4 chipolte peppers. You can add 3 , mix well in processor and add 4th if you want it spicier. As mixture sits it does get a little more spicy, so you may want to keep this in mind. This will make 2 large balls or 1 large ball and 1 large roll.
If you do not want to make this much just half the recipe.

1. Using a food processor mince the shrimp(process after adding each ingredient)
2. Add cream cheese cut in pieces
3. Add lime juice
4. Add chipolte peppers. This is a mild hot. ( If you want a mixture that is hotter add more chipolte peppers. This can be added after everything has been blended in food possessor and just process a little more until peppers have been well blended)
5. Add cheddar cheese
6. When mixed well put in a bowl with spatula. Put in the frig for 2-3 hours or until stiff enough to handle.
7. Pour pecans on wax paper. Half cheese mixture and make into a roll or ball or 1 of each. Roll in pecans until covered. If not enough add a few more pecans. Leave on wax paper and chill until firm.(3 hour or over night).

This is a very good cheese ball and a little different from most. If desired you can add crabmeat or craw fish. If using crabmeat use 3/4 #. Makes a great appetizer or something to munch on in the frig. Triscuit crackers as well as any other go well with this cheese ball. Enjoy!!!!
