2/3 cup butter or margarine
2/3 cup flour
1 onion chopped
7 cups milk
4 large baking potatoes (boiled & cubed)
4 green onions, sliced
12 strips of bacon, cooked & crumbled
1 1/4 cups shredded cheddar cheese
3/4 tsp salt
1/2 tsp pepper
(sometimes I add ham also---as much as you want)

Directions:
In a large skillet, melt butter with chopped onions. Stir in flour; heat and stir until smooth. Gradually add milk, stirring until thickened. Add potatoes and green onions. Bring to a boil, stirring constantly. Reduce heat; simmer for 10 minutes. Add remaining ingredients; stir until cheese is melted.
