1-2 lbs. hamburger, 1/2 c. chopped onion, 1-2 lb. frozen or fresh mixed vegetables, 1 can cream of mushroom or cream of chicken, 4 c. mashed potatoes (homemade or not- I prefer homemade), 1/2 lb. grated cheddar cheese

Peel, chop and boil potatoes. While they are boiling, brown the hamburger with onion. Drain and set aside. Cook the veggies and add to meat with soup. Salt and pepper to taste and spread in a casserole dish. Finish up the mashed potatoes and spread over entire meat mixture. Sprinkle cheese over the whole thing and bake at 350 degrees until cheese is hot and bubbly.
