2lb fresh spinach
3 tbsp. pine nuts
2 tbsp. olive oil
1 tbsp. mined garlic
3 tbsp. currants
kosher salt and pepper to taste

Wash spinach. You needn't dry it, but drain well,
Toast pine nuts in cast iron skillet over medium heat. Watch carefully because they burn easily. Can be done in oven as well.
Heat oil in a large skillet or Dutch oven. Saute garlic for 2-3 minutes. Stir in currants and then add spinach. Cover skillet and cook for 5 minutes, until spinach is wilted. Season with salt and pepper. Toss in pine nuts and serve.

I usually double recipe and add more spinach and currants. The uncooked spinach is voluminous but cooks down quickly.
