5 eggs
1 cup milk
3 handfuls of crushed cornflakes
1 can cream style corn
¼ cup brown sugar
Salt and pepper as desired

Butter, brown sugar, and marshmallows for top

Directions:
Directions:
Beat the eggs lightly in a 1 1/2 qt casserole dish, then add the milk and other ingredients, mixing well.

Bake at 325 to 350 degrees 45 minutes. Then dot the top with butter and brown sugar. Cover with marshmallows (either the big or the small ones). Bake 15 minutes more, until marshmallows are golden brown.. Pudding is done when a knife inserted in the center comes out clean.

This was a constant at Swanson and Lindskoog family holiday dinners, starting in the 1940’s or 50’s. The recipe came from Grandma “Nana” (Florence) Lindskoog. It is great served with turkey or ham.
