All vegetables need to be cut in strips except green beans:
4 carrots, peeled, cut into strips
3 stalks celery
1 yellow squash
1 zucchini
1/4 lb slender green beans, trimmed
1 T unsalted butter
1 T olive oil
1/4 red onion, thinly sliced
Salt, freshly ground pepper
1 T chopped parsley

Directions:
Directions:
1) Fill a large saucepan with lightly salted water and bring to boil. Place carrots in kitchen strainer basket with handle; immerse in boiling water for 1 min. Drain, set aside. Place celery, yellow squash, in strainer basket for 30 seconds. Place green beans in strainer and boil for 2 mins. Drain, set aside.

2) In skillet, heat butter and oil over medium heat. Add the onion and saute for 5-7 minutes, or until soft. Add other vegetables and sauté for 3 mins. Add salt, pepper, parsley. Serve immediately.
