½ cube butter
1 small onion, chopped
1 cup rice

2 cans Campbell’s beef broth (or chicken broth—depending on your menu) I don’t dilute the broth, but if you like a milder flavor, you could.

Directions:
Directions:
Brown the rice, onion, and butter together. (I usually start the onion first and let it get translucent before adding the rice. Then cook the mixture until it is golden brown.)

Add the broth. Cover and simmer 20 – 25 minutes, or until rice is soft and fluffy and all the liquid absorbed.

I found this recipe in a book about barbecuing when I was about 17. (I loved to cook and had to start cooking young since Grandma Fern was sick a lot when I was in high school.) People call this our “brown rice” dish. It has been a great standby recipe for decades.
