Ingredients:
1 heaping tbsp yeast, 1/2 c. warm water, 1 c. mashed potatoes (fresh or box made) 1/2 c sugar, 1/2 c butter softened, 1 c. scalded milk, 2 tsp. salt, 2 eggs, 6 c. flour, 1/2 a bag of brown sugar, and bottle of cinnamon. More butter or margarine to coat dough.

Directions:
Directions:
Place yeast and warm water to the side. Prepare your mashed potatoes also and place in a bowl. ( I always use the instant kind) Add sugar, softened butter, scalded milk, salt and eggs to the potatoes. Mix well. Add the yeast mixture to the already mixed ingredients, then add flour 1 cup at a time. Mix well and knead for about 10 mins. Turn out on a lightly floured surface. Roll out about 1/4 inch thick. I usually take a handful of butter or margarine and spread across the dough evenly. I then dump out as much brown sugar as I need to coat the buttered dough well. Then I shake as much cinnamon as I feel necessary on top of the brown sugar. You can either roll your dough up and then slice the rolls individually or I like to take a knife and slice my dough length wise with strips about 1/2 inch thick. I then roll them up individually, so they turn out tighter and have more swirls in the rolls. Place in a greased baking pan or dish. Punch each roll down into the pan. Let rise for 30-45 mins. Then bake in a pre heated 400 oven for 15-20 minutes. Take out let cool for 5 mins then frost with your favorite homemade icing. Let sit 10 more mins (if you can) then serve warm.

Personal Notes:
This is Aunt Lisa Hansen's dough recipe. It is my favorite, and I have tried a lot of cinnamon roll recipes. My husband and kids are always asking for them, and devour them rather quickly!
