2 cucumbers, 2 tomatoes, rice vinegar, salt and pepper, lemon juice, and lemon pepper.

Directions:
Directions:
Peel cucumbers and dice into bite size pieces, Slice tomatoes into bite size pieces. Place in bowl and cover with about 5 -10 tbls rice vinegar. Add salt and pepper and lemon pepper to taste. Add lemon juice to your taste. Let marinate in fridge for about 10 mins before serving.

This is good on top of white rice and served with grilled chicken. This was one of the only things that sounded good and would stay in my belly when I was pregnant with Braden.
