8 egg yolks
2 egg whites
2 cups sugar
1 cup water
1 teaspoon vanilla

Directions:
Directions:
1. Preheat the oven to 350 F;
2. Line about 12 small muffin tins with butter;
2. Beat the egg whites until stiff;
3. Beat the egg yolks well, add the egg whites by hand;
4. Pour into lined muffin tins;
5. Place tins on top of a cookie sheet and put in the oven for about 20-30 minutes;
6. Make a medium consistency sugar syrup with the sugar the water and the vanilla;
7. When cool, unmold the papos de anjo, and place them in the sugar syrup;
8. Let them stay in this syrup until well soaked (about one day)

This recipe is from my grandparents' cookbook. It was one of those that I needed my mother's help to decipher. I understand you can put a bit of rum or other spirit in the syrup to give the papos a special flavor!
