2 lbs. spinach leaves,washed and coarsely chopped
3 T. olive oil
3 T. pine nuts
4 garlic cloves
5 T. golden raisins
1/2 tsp. salt
1/4 tsp. pepper

Directions:
Directions:
Bring 3 qts. water to a boil in a large pot. Add the spinach a little at a time, pushing it down to the bottom of the pot with a spoon. Give it a good stir once all the spinach has been added, reduce the heat to medium-high and cook for 10 minutes, stirring often. Drain well and set aside.
Soak raisins in 1/2 c. hot water for 20 minutes. Heat the olive oil, pine nuts and garlic in a large pan set on high heat until the garlic and pine nuts begin to brown, about 2 - 3 minutes. Drain the raisins, disgarding the water. Add the spinach, raisins, salt & pepper to the pine nut/garlic pan and cook for 3 - 4 minutes, until heated through. Serve hot.
