3 eggs
1 cup salad oil
Wesson or corn oil
1 1/2 cup granulated sugar
1 teas salt
1 T. vanilla extract
2 C. zucchini (coarse grated)packed
3 C. flour (sifted)
1 1/4 tsp.baking soda
1/2 tsp. baking powder
1 tsp. nutmeg
3 tsp. cinnamon.
Optional 1 cup walnuts chopped
1/2 cup raisins rinse with water

Directions:
Directions:
In large bowl, beat eggs until frothy. Add oil, sugar, vanilla extract; salt & grated zucchini. Mix well, sift together dry ingredients in separate bowl; and blend into first mixture. Stir in nuts, spices & raisins last. Pour in loaf pan. 10" x 6" size. (well greased) Be sure sides of pan are well greased.
