1 cup all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon shortening
1/3 cup warm water

Cooking oil for deep-fat frying
Honey, optional
Confectioners' sugar, optional

Directions:
Directions:
In a bowl, combine flour, baking powder and salt. Cut in shortening until mixture resembles fine crumbs. Gradually add water, stirring with a fork. The dough will be crumbly. On a lightly floured surface, knead the dough for 3 minutes or until smooth. Cover and let rest for 10 minutes.

Roll out into a 12 inch x 10 inch rectangle. Cut into 12 squares. In a deep-fat fryer, heat 2 inches of oil to 375. Fry sopaipillas for 1-2 minutes per side. Drain on paper towels; keep hot in a warm oven. Serve with honey, jam, or dust with confectioners' sugar if desired.

I was raised in Carlsbad, NM, and these were my favorite dessert. We never had them at home, but when we would eat out at a local Mexican restaurant, this was what I lived for! These "sofa pillows" were puffy, and hollow, so I would poke a hole in the top, fill them with a bit of honey and experience the bliss!
