Monterrey Jack cheese

Directions:
Combine drained chicken and salsa. Fill and roll tortillas and place in a 9X13 pan seam side down. Pour cream over and bake at 375 for 35 min. Top enchiladas with a generous amount of cheese and bake for another 10 min. (I usually cut the entire pan of enchiladas in half before I put the cream on so it gets inside as much as possible)

Personal Notes:
These are not "light" enchiladas, but are extremely tasty.
