(12 inch) flour tortillas
3/4 cup shredded Cheddar/Monterey Jack cheese blend
1/2 cup Zucchini squash sliced thin or diced
1/2 cup Yellow Squash diced
1/2 cup diced red /green / yellow bell pepper
1/2 cup black beans, drained if desired
chopped green onion or yellow onion
chopped green chili pepper if desired



Directions:
Directions:
Saute vegetables and add beans if desired.
Crisp tortilla in heated pan on one side. Then turn to other side add cheese, heat until cheese is melted. Add veggies and fold. Remove from heat and you can add salsa and sliced avocado. Very good!
