3 c flour
1/2 tsp salt
1 1/4 tsp baking powder
1 1/3 c warm water
Enough vegetable oil
1 lb. pinto beans
1 c fresh diced tomatoes
1 c fresh diced onions
1 c fresh cut lettuce
1 c fresh grated cheese

Prepare the pinto beans several hours beforehand. Cook in crock pot until soft. Drain and smash pinto beans so it looks like refried beans. Set aside for now. Prepare the fresh vegetables and set aside.

Mix flour, salt, and baking powder in a bowl. Add luke warm water and mix until dough is soft, not sticky. In the mean time, pour the vegetable oil into an iron pan or stainless steel pan. Set pan on low. As the vegetable oil is heating up, knead the dough into the size of dinner rolls. While keeping an eye on the vegetable oil that is heating up, use a rolling pin to flatten out the dinner roll dough. Once it is flat like a tortilla, slowly put it into the vegetable oil. Using a spatula fork or tongs slowly turn the cooking dough around in the pan. When the sides turn brown, flip the frybread over and cook other side. If it is black...you went too far!

When you are done cooking the frybreads, pull out the smashed beans and fresh cut vegetables. Spread the beans onto the frybread and top it with lettuce, tomatoes, cheese, onions, and your favorite salsa. Enjoy!
