Ingredients:  
3 cucumbers
salt
1 small onion
1 /2 cup cider vinegar
2 T. Oil
1 T. Sugar
2 T. Water
2 tsp caraway seeds (optional)
1/2 tsp paprika
salt and pepper

Directions:
Directions:
Cucumbers can be peeled or not as you prefer. Slice thinly on the side of a grater. Sprinkle with salt and let stand at room temperature for an hour. Drain. Combine remaining ingredients and cucumbers and mix well. Add salt and pepper to taste. Chill until ready to serve.
