5 Lbs. russet potatoes
Salt and pepper
Garlic powder
Seasoning salt
Olive oil
1 dozen hard boiled eggs, chopped
1 small can sliced black olives
1/2 cup chopped red onion
1 1/2 -2 cups mayonnaise
1 tsp. mustard
2 stalks celery chopped
2 tsp. chopped parsley

Directions:
Directions:
Cut potatoes into 1/2 inch cubes. Season with salt, pepper, garlic powder, season salt and olive oil. Layer in a large baking pan. Do not over crowd, use two pans if needed. Bake 1 hour at 400 or until brown and crispy. While baking do not mix potatoes until at least 30 minutes into baking to allow the bottom of the potatoes to crisp. When done, remove potatoes from baking pan, drain on paper towels and allow to cool. Add the remainder of the ingredients and mix together. Adjust salt and pepper to taste. Refrigerate and serve within 3-4 hours. Garnish on top with sliced egg, parsley and sprinkle with paprika.
