1 small to medium pumpkin
1 onion, chopped
2 T. oil
1 lb hamburger
2 T. soy sauce
2 T. brown sugar
1 (4 oz) can of sliced mushrooms
1 can cream of chicken soup
1 1/2 c. cooked rice
1 can sliced water chestnuts.

Cut of top of pumpkin and clean out. Heat oven to 350. In a sauce pan, saute onion and meat in oil until the meat is browned. Drain. Add soy sauce, sugar, mushrooms & soup. Simmer 10 mins. Add rice and water chestnuts. Spoon mixture into pumpkin, leaving 1" head room. Replace top and place entire pumpkin on baking sheet. Bake until pumpkin is tender. About at hour depending on how big the pumpkin is. To serve, scoop hamburger and rice mixture in to a serving bowl and slice pumpkin from the top to the bottom in wedges. Serve with butter and salt and pepper to taste.
