1 whole 4-5 lb. hen - cook on top of stove with
2 large chopped onions
1 stalk celery - cut up
pepper
4 pans of cooked cornbread
3 T. sage or poultry seasoning
3-4 eggs
1 T. salt
1/2 loaf bread
12 saltine crackers
1-2 cans chicken broth (may need)

Directions:
Preheat oven 350 degrees - Cook hen on top of stove with 2 large chopped onions and celery stalk cut up - salt and pepper - cook covered with water until done - about 1 hour - take chicken out - use liquid for broth - for a family of 30 people, it takes 4 pans of cornbread - cooked - Mix all ingredients with hands - save some of broth for gravy - I always buy some chicken broth in case dressing or gravy needs it - cut up 1/2 meat off chicken bones and put in dressing and use the rest as is - When you bake the hen or turkey - pull out heart, neck and gizzards - you can boil them in salt water and use in dressing or gravy - I usually throw away 1/2 of that, if there are no gizzard you might want to buy a package and use about 1/2 of package for giblet gravy. Cook 1 to 1 1/2 hours depending on how thick the dressing is in your pan.
