4 c. potatoes, peeled and chopped
1 c. celery, sliced
1 c. onion, coarsely chopped
2 c. water
2 tsp. salt
2 c. milk
3 T. margarine
1 T. dried parsley flakes
1/8 tsp. pepper

Directions:
Directions:
Combine first 5 ingredients in large pan. Simmer, covered, about 20 minutes or until tender. Mash mixture leaving some vegetable pieces whole. Stir in remaining ingredients; return to heat and cook, stirring constantly, until soup is heated through.
