Ingredients: 1 whole onion, chopped 3 chopped cloves of garlic 1/4 c. fresh parsley (if using dried add later) pork chops or sausage ( I like to use Mercadona's pkg of meat that they wrap up for soup- ternera para cocido) 3 cans of tomate triturado (the large cans) 2 cans of tomate frito (the small cans or two boxes) 1/4 c. white wine (or wine vinegar) 1/2 c. water 1 bay leaf or 1 tsp. of ground laurel 1 tsp. garlic powder 1 tsp. onion powder 2 tsp. oregano 2 tsp. basil (alabaca) 1/4 c. parsley (unless you have already added fresh in the saute mixture) 1 tsp. salt 1 tsp. sugar
Meatballs: Use Mercadona's "albondigas" or 1 lb. ground port 1 lb. ground beef 1/3 c. grated cheese 1/3 c. seasoned Italian breadcrumbs (if not seasoned then add 1 tsp. garlic powder, 1 tsp. onion powder, 1/8 c. parsley) 1/4 c. milk 1 egg 1 1/2 tsp. Worchestershire sauce

Directions:Saute onions, garlic, parsley and meats/sausages. After all is sauteed place in sauce pot (or crockpot) and add the rest of the ingredients. Stir, bring to boil and let simmer for at least 2 hours stirring occasionally. Meatballs: Mix all meatball ingredients together, make into balls and saute until lightly browned but NOT cooked all the way...put in sauce and let cook the rest of the way in sauce ....adds more flavor. |
