5 large bananas
4 eggs well beaten
1 cup shortening
2 cups of sugar
1 cup Buckwheat flour
1 cup GF Mama's Pancake mix
1/2 cup Montina Flour
1/2 cup Hazelnut Meal
1 TBSP xanthan gum
2 tsp baking soda
1 tsp salt

Directions:
Directions:
Cream the shortening and sugar together, add smashed bananas and beaten eggs and mix well. Combine flours, baking soda and salt. Blend into batter. Bake in 2 well greased loaf pans lightly floured at 300 for 1 hour and 20 minutes.
