2 T. lime juice (1 lime)
2 T. brown sugar
2 tsp. A Taste of Thai Garlic Chili Pepper Sauce
2 tsp. A Taste of Thai Fish Sauce
1 firm papaya (1 lb) (with as green skin as possible, no yellow)
8 cherry tomatoes, halved
2 T. chopped dry roasted peanuts
2 tsp. chopped cilantro
Crisp iceberg or romaine lettuce leaves

For dressing: In a small bowl, mix lime juice, sugar, garlic chili pepper sauce and fish sauce until sugar is dissolved. Peel papaya and seed. Slice into match stick-like pieces, or grate long shreds on a large hole grater. Put into a medium bowl. Add tomatoes, peanuts, cilantro and dressing. Toss to combine. Serve on a bed of chopped lettuce or on individual lettuce leaves.
