3 lb. rockfish, or other fish, scales and head on
8 c. of coarse salt, preferably sea salt
Sprigs parsley

Grease an oval metal serving platter in which the fish fits fairly snugly. Place the fish on the tray and pour on the salt, covering the fish completely - you may need more or less salt, depending on the pan and the fish size. Bake at 350°F for an hour. Brush the salt off the top of the fish and decorate the platter with parsley sprigs. Bring to the table for the diner's approval. To serve, brush off all of the salt. Remove the skin and discard. Carefully bone the fish and arrange fillets attractively on individual dishes (fish will be warm, not hot), garnished, perhaps with potatoes and a green vegetable. A fine white wine is appropriate.
