Chicken and Broccoli Recipe

6 c. chicken (3 breasts, boned, skinned and sliced thinly)
3 tbsp. corn starch
1 tsp. salt
1 tbsp. sugar
3 tbsp. dry sherry
1/2 c. peanut oil
1 1/2 c. chicken broth
6 tbsp. water

1.Put chicken in mixing bowl
2.Add cornstarch, salt and 1/4 tsp. sugar.
3.Mix and set aside
4.Cut broccoli into flowerettes and pare the stems.
5.Cut the stems diagonally into bite size morsels.
6.Blend together wine, salt to taste, and remaining sugar.
7.Set aside.
8.In wok or skillet, heat the oil and add the chicken pieces.
9.Cook, stirring, about 90 secs.
10.Remove the chicken.
11.Add the broccoli and cook in the oil. Stir until crisp tender.
12.Remove the broccoli and all but 1 tbsp. oil.
13.Return the broccoli and chicken to wok..
14.Add wine mixture and cook 1 min.
15.Add chicken broth and cornstarch and water.
16.Serve hot over rice.
