1 onion, chopped
1 garlic clove, minced
1/2 c. butter
1/2 c. flour
1 tsp. salt
2 c. chicken broth
1 1/2 c. milk
4 c. Mozzarella cheese (grated) (in Spain 2, 200g bags)
1 c. Paremsan cheese
1 tsp. basil
1 tsp. oregano
1/2 tsp. pepper
2 c. ricotta cheese
1/2 T. parsley
3 c. cooked, cubed chicken
12 no cook lasagna noodles

Directions:
Saute onion and garlic and butter. Add 1/2 c. flour. Cook briefly. Add salt and broth/milk slowly. Boil 1 minute stirring constantly. Stir in 2 c. Mozzarella, 1/2 c. parmesan, basil, oregano and pepper. Set aside. Combine ricotta, parsley, and 2 c. Mozzarella. Set aside. Spread 1 1/2 c. cheese sauce in a greased 9x13 dish. Cover with 4 noodles, 1/2 of ricotta mixture and 1/2 of the chicken. Cover with 1/4 of the cheese sauce, 4 noodles, ricotta, then chicken. Top with 1/4 of the sauce. Layer noodles again, then remaining cheese sauce. Sprinkle 1/2 c. Parmesan over all. Bake at 350º F uncovered for 35-40 minutes. Let stand 15 minutes before serving. Serves 8.
