2 c. flour
1 c. butter or margarine
2/3 c. brown sugar
2 eggs, separated
1 1/2 - 2 c. coconut (US coconut makes them look more like nests, but Spanish coconut works fine too.
Assorted jellys and Jelly Beans (for Easter cookies)

Directions:
Directions:
Cream butter and sugar. Add egg yolks. Mix well. Add flour. Roll into 3/4 balls. Whisk egg whites. Roll balls in egg white then coconut. With a thimble or the end of a wooden spoon, press an indentation in the middle of each cookie. Bake at 350 F for 10 minutes (indentation will be elevated when cooking). After removing from oven, re-press indentations in each cookie. Cool. Fill with favorite jelly or jelly beans. Great for Easter.
