3 eggs
2 c. sugar
1 c. oil
2 c. peeled, grated zucchini
3 tsp. vanilla
3 c. flour (1 c. whole wheat and 2 c. white)
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp. cinnamon
1 c. chopped walnuts, optional

Directions:
Directions:
Beat eggs until light and foamy. Add sugar, oil, zucchini, and vanilla. Mix lightly, but well. Combine dry ingredients and add to egg mixture. Stir until well blended; add nuts. Pour into 2 greased 8x4 loaf pans. Bake at 350° F for 45-50 minutes.
