4 cups fresh spinach, coarsely chopped.
Handful fresh basil and parsley roughly chopped.
2 to 3 Tablespoons sundried tomatoes in olive oil and Italian seasonings, strained and julienned
¼ cup shredded reduced fat mozzarella cheese
2Tablespoons fresh grated parmesan cheese
4 5oz. boneless, skinless chicken breast halves
1 teaspoon Italian seasoning
1 teaspoon garlic powder or I fresh cloves pressed
dash salt
½ teaspoon ground pepper
1 tablespoon extra virgin olive oil

Directions:

Preheat 375 degrees

Saute spinach and fresh herbs with garlic in sprayed pan until wilted. In bowl add , sun dried tomatoes, and cheese to spinach mixture. Set aside.

Cut deep pocket in side of chicken, stuff chicken with mixture, close and seal with a toothpick . Brush tops of chicken with olive oil, salt and pepper, sprinkle with Italian herbs and bake 20-30 minutes until cooked through and browned.
