8 egg whites
1/4 tsp. cream of tartar
1/4 tsp. salt
1 1/2 cup fine sugar
1 cup flour
1/2 tsp. vanilla
1/2 tsp. almond

Icing:
3 egg yolks
1/2 cup sugar
3/4 cup milk, scalded
2 tsp. gelatin
1/2 pint whip cream
2 Tablespoons rum

Beat egg whites until frothy and light, until they peak. Fold in 1 cup fine sugar. Beat 5 egg yolks with 2 Tablespoons water, add 1/2 cup sugar and fold into egg whites. Fold in 1 cup flour plus vanilla and almond. Bake in angel food pan for 1 hour at 300 degrees.

Icing:
Soak 2 tsp. gelatin in 1 Tablespoon water. Stir yolks and milk over flame until froth disappears, remove from stove. Add gelatin, let cool. When cool add 1/2 pint whipped cream plus 2 Tablespoons rum. Ice cake with this. Do in degrees. Partially ice, refrigerate, then add rest, refrigerate until eating.
