1 fryer, cut up
1/4 cup oil
1/4 lb. oleo
1 cup uncooked rice
2-1/2 tsp. salt
1/4 tsp. pepper
3/4 cup onion, chopped
1/2 cup green bell pepper, chopped
1 clove garlic, minced
1/4 cup tomato sauce
1 can (No. 303) tomatoes
1 can (4 oz.) mushrooms
2-1/2 cups boiling water

Lightly brown chicken in oil, lay aside. Pour off grease. Fry rice in oleo and add rest of ingredients. Combine chicken and rice mixture and place in casserole dish. Bake 1 hour, uncovered, in 375 degree oven.
